For dinner tonight you could dig through your old recipe stacks for something you’ve made a dozen times over, or you could try one of these five chicken recipes from SORTED Food. 1. Slow Cooked Butter Chicken

Dinner for four will be a breeze with this slow cooked chicken. Once everything has been measured and prepped, it is thrown in a slow cooker, or crockpot, and left for about 4 hours.

Ingredients:

  • Diced boneless chicken thigh (400g)
  • A glug of oil
  • 1 onion
  • 2 cloves of garlic
  • A thumb-sized piece of ginger
  • 1 red chili, deseeded
  • 2 tablespoons butter
  • 3 cardamom pods
  • 4 plum tomatoes
  • 2 teaspoons curry powder
  • 1 tablespoon garam masala
  • 1 cinnamon stick
  • 1 tablespoon tomato purée
  • chicken stock (200ml)
  • A good glug of double cream
  • A handful of fresh coriander, leaves torn
  • Steamed white rice to serve

Directions: Set the slow cooker to high. Trim the chicken thighs to remove any excess fat or sinew. Peel and dice the onion. Grate the peeled garlic and ginger then finely chop the chili. Throw the onion, garlic, ginger, chili, and butter into the slow cooker with the chicken. Crush the cardamom pods and roughly dice the tomatoes. Chuck in all the spices, tomatoes and tomato purée then pour over the chicken stock. Mix the curry well before leaving it to cook for 4 hours. Stir in the cream and torn coriander leaves just before serving with steamed white rice.
