6 Delightful Fish Recipes for Easy Summer Evening Meals
On late summer evenings, when some of the heat and humidity starts to dissipate from the air, sitting down to a meal with friends and family can be a relaxing and casual event. That is unless you don’t know what you want to serve. After a day in the sweltering heat, your menu and appetite is calling for a light, fresh dinner and fish is the perfect way to do this. Moist and tender, pair one of these 6 recipes with a crisp, cool white wine for an evening among friends.
1. Cajun Rainbow Trout
Don’t let “light” be a codeword for bland. Whole Foods certainly doesn’t with this recipe for rainbow trout with cajun seasoning. No cajun seasoning on hand? Simply mix up your own using the spices and ratios below if necessary.
- 4 (6-ounce) farm-raised rainbow trout fillets (½-inch thick)
- 2 teaspoons extra virgin olive oil
- 1 tablespoon Cajun seasoning
- 2 tablespoons chopped fresh parsley
- 1 green onion, chopped
- lemon wedges
- 1 tablespoon paprika
- 2 teaspoons sea salt
- 1½ teaspoons freshly ground black pepper
- pinch of cayenne pepper
- 1 teaspoon each: dried oregano, chili powder and dry mustard
Directions: Preheat broiler. Pat fillets dry and lightly brush both sides with oil. Sprinkle both sides evenly with Cajun seasoning. Place skin side down on broiler rack. Broil 4-6 inches from heat for 4-5 minutes or until fish flakes easily when tested with a fork. Arrange on a warmed serving platter and sprinkle with parsley and chopped green onion. Serve with lemon wedges.
